Green Tea and Walnut Cup Cakes

My love affair with matcha tea goes on. Here is my recipe for green tea cupcakes it is also a big favorite of my kids. The recipe can be easily doubled. This makes 12 medium size cupcakes.

1 cup all-purpose flour
1/2 cup milk
1/4 cup vegetable oil
1/2 cup sugar
1 and 1/4 teaspoon baking powder
3 teaspoons matcha green tea powder, you can add one teaspoon more if you like stronger tea flavor.
1 egg
3 tablespoon chopped walnuts
1/4 cup hot water

Pre-heat the oven to 350 F.
In one bowl mix milk and oil.
Add egg and sugar and mix it well.
In another bowl sift together flour, baking powder, and green tea.
Add the dry ingredients to the wet ingredients and mix for about two minutes.
Add the 2 tablespoons of walnuts to the mix, keep a tablespoon to sprinkle on top.
Add 1/4 cup hot water and mix well.
Line a 12 cupcake sheet with liners.
Pour the mixture equally into all 12 cupcake cups.
Sprinkle the remaining walnuts on top.
Bake the cupcakes for about 10-11 minutes, or till the toothpick comes out clean. Simply take a toothpick and insert it into the center of the cupcake. If it comes out clean, or with only a few moist crumbs attached to it, the cake is done.
