1 cup red quinoa
4 scallions chopped
2 tbs green raisins or dried cranberries
1 green chilli chopped
1 tbs chopped cilantro
2 tbs roasted pine nuts
1 tbs lime juice
salt to taste
Boil 2 cups water.
Wash quinoa and add to the boiling water. Cook on medium heat till quinoa is done and all water absorbed. Let it cool down for about 10 mins.
Add rest of ingredients except pine nuts and mix well.
Refrigerate for an hour for flavors to develop.
Add rostedcpine nuts just before serving.
